A day tour to discover the excellences of Italian Cousine: visit an “Acetaia” a Traditional Balsamic Vinegarmaker, a Parmigiano Reggiano cheese farm, MUSA: the cold cut’s museum and secret recepies for the mortadella and prosciutto ham, finally: Lambrusco wine tasting

Meet your guide and private minivan and go to an organic Parmigiano Reggiano cheese farm in the country side. Follow the making process and see the store room where more then 5000 wheels are ageing from 12 up to 48 months. In the little bottega next to the storage room you can taste the cheese and buy some to take home.
After this, board your car and proceed for the visit to a Balsamic vinegar Traditional Acetaia: this is a traditional Acetaia and a museum where you can see the largest collection of “tragni and zuccotti” the ancient way how we use to age the Traditional Balsamic Vinegar in Modena. I will explain how we made Traditional Balsamic Vinegar in Modena since centuries and what you find in big distribution. You’ll be fascinating from those old barrels where the product is aged since 1870 . Taste of the product and shopping.
It’s lunch time and what’s better than a piece of fresh bread and a slice of mortadella just cut, perhpas with pistacchi ( the real Bolognese style)! Don’t you feel the deliciuos smell coming in your mouth? Ok, now we will discover how the real mortadella is made of and the prociuscitto and salami and much more than this!!

MUSA: An itinerary that reveals the flavours and skills that have always filled our tables

Interspersed with images, videos, descriptive texts with stories and anecdotes of individual products, an exhibition of antique machinery and other historical artefacts used for processing, and also raw materials such as spices and flavourings used during processing. Taste any kind of those cold cut!
Is your mouth a little fatty? We need a glass of fresch Lambrusco wine, not too much alcoolich but paerfumed of red friuts and sparkling to clean the tasting of the prociutto to leave space and taste the gnocco fritto : a typical deep fried bread , so fluffy and unfogettable!!
In the closest countryside we reach a Lambrusco wine cellar where we’ll be tasting a selection of local boobles wines. Lambrusco sparkling red wine is really unique, research, efforts, studies has been necessary to restore the name of this wine which is nowadays one of the most exported wine in the world.
Lambrusco wine maches our Emiliana Cusine and food you have to try it with the tagliatella with ragù!
